Keto Pizza Crust - nom nom!
Nom nom - tonight we are having a new grain free / keto pizza crust recipe we tried to review!
Ingredients needed:
- 12 oz shredded mozzarella cheese - melted until gooey quickly mix in following:
- 2 tsp baking powder
- 1 tsp xanthum gum
- 2/3 cup coconut flour
- 2 eggs
Instructions:
Melt mozzarella either in microwave safe bowl or use a double boiler method on stove top - heat until it is gooey.
Mix together with remaining ingredients and roll out evenly onto non stick silicone baking tray - I used some parchment paper over top to prevent my rolling pin from sticking to the crust.
I also added some Epicure Pizza seasoning sprinkled on top for a little added pizza flavor!
Than bake at 350F for 15-20 minutes so that it is slightly crispy around edges and than take out and add sauce and toppings of choice and bake again for another 10-15 minutes or so to heat those up!
Review:
The crust was AWESOME and loved being able to pick it up eat like a normal pizza without it being a floppy disc where the toppings all slide off! Definitely my new favorite!

For the number crunchers in the audience!
I am a frugal fanny ... but admittedly for years I have justified the expense of biweekly manicures because they were my reward for quitting smoking in 1999 and the Dr told me to choose something to do for myself with the money I would save so pretty nails served as both a reminder to not return to ugly nicotine fingers and were an act of self care.
I honestly rationalized that they were cheaper than my cigarette habit was! But seeing the MATH laid out like this I am glad I found GelMoment this year!!! I have been going for 20 years to the salon - so my math is SCARY how much I have spent on pretty nails over the past two decades!!!
That does not even include all the DIY products I bought in there thinking I could do it myself but than had never been able to get a lovely look because I cannot sit still long enough for traditional polish to dry so they would smudge and look horrid! Now with GelMoment the polish cures in less than a minute so fast results just like at the Salon but for such a tiny fraction of the cost cause I am providing the labor ... so now I justify the savings I get by using my GelMoment from the safety and comfort of home to engage in seeing an RMT once a month to help with my back pain instead .... reallocated SELF CARE budget for the WIN!!! Pretty nails AND reduced back pain!

Cannot get enough of this new creative medium
When you are stuck at home due to Covid you start to go snaky! Over the last 10 months I have felt my mental health teetering due to the stress of not working, the stress of impacts of Covid on not seeing friends and family in person and the limited access to my normal 'self care' routines due to salons being either closed or the risk with my auto immune challenges being to great.
Finding GelMoment has been a godsend - I know that seems like an over extreme reaction - but it has combined both a little stress relief as a potential source of income AND much needed self care rituals in doing my own nails and having a creative outlet in the process!
I am loving the Creativity kit - it is perfect for anyone who loves to get creative with their nails!
