Getting Creative with Cravings

When you’re craving Haagan Dazs for breakfast but that’s not on plan Torani sugar free syrups to the rescue!


What You Need

2 cups spinach 
1 cup plain Greek yogurt or scoop protein powder or half serving each
2-3 slices of frozen beets

Place all ingredients into your blender
Blend until smooth.
Add Cold water as needed to consistency you like.

Perfect knock off with just on 100 calories and packed with protein and low carb and you can balance your plate with slice of toast with a healthy fat and piece of fruit!

Spicy Paprika Chicken

We had a craving for pub grub over the holidays but unfortunately most actual pub grub is so not Celiac friendly and well I am frugal paying for a pub drink when we can make a Bailey's over ice at home for a fraction of the cost I would rather just stay home put on some music and have our own pub grub night in ~ so that is what we did! 

These are a tasty hit in the house ~ grain free and totally crispy just like a pub grub wing or in my case drum cause I only like the drums! 

 

Spicy Paprika Chicken

What You Need

  • 2 lbs. chicken wings and drums
  • 1 tablespoon garlic powder
  • 1 tablespoon smokey paprika
  • 1 tablespoon cayene pepper (adjust more or less depending on your heat preference)
  • Freshly ground black pepper, to taste
What You Do
  •  Rinse meat well. 
  • Mix spices in a small bowl
  • Place chicken pieces in a ziplock bag and spices
  • SHAKE IT to cover ~ I like to leave it marinade in the spice over night in the bag
  • Cook in oven on 350F until internal temp is 160F or we like them on the BBQ for the extra smoky flavor.
  • Serve with veggies and dip for a nice pub grub feel! (I tried a new Paleo inspired hummus for mine)

I love these just plain like this and that is how they look in the photo but if you like a 'glaze' for your chicken my spouse loves this Sriracha based sauce brushed on his as they are BBQ and than uses any leftover as a dip while eating.

Sriracha-based sauce

What you Need

  • 5 tbsp. olive oil
  • ¼ cup raw honey  
  • ¼ cup sriracha 
  • 1 tbsp. coconut aminos
  • 1 lime - juiced 
 What You Do
  • Combine in a small bowl and mix well. Let stand at least 20 minutes to blend the flavors.
  • If you want to have some for both basting and as a dip divide the bowl into two halfs. Use one for basting on your meat and set some aside the other for your dip
  • Can store any leftover dip (from the bowl that was not contaminated with a basting brush or anyone actually dipping meat in it) in air tight container in fridge for several weeks.
I shared this on Instagram before I posted to the blog and got a reader tip of using the spicy paprika and onion powder for a Doritos inspired chicken ~ I cannot wait to try that combo!

Savory Paleo Butternut Squash Latkes

So what to eat when you are grain free and recoverying from a Rota-virus and the recommended 'BRAT DIET' of bananas, rice, applesauce and toast ends up being the BA diet of Bananas and applesauce! 

Look in the fridge and throw together what you think might be 'safe' to digest from the leftovers there so you do not to spend too much time standing at the stove and yet will still have lots of healthy benefits to get you back on your feet!

Butternut squash  packs a lovely punch of vitamin B6, essential for the proper functioning of both the nervous and immune systems so lets use up t hat!

Parsley  is rich in many vital vitamins, including Vitamin C, B 12, K and A. This means parsley keeps your immune system strong, tones your bones and heals the nervous system, too. It helps flush out excess fluid from the body, thus supporting kidney function.

Garlic which helps to boost immunity and detoxify the body so is an awesome aresenol in the diet to fight off sickness! 

Ginger has a long history of use for relieving digestive problems such as nausea, loss of appetite, motion sickness and pain. 

Onions improve the working of Vitamin C in the body, thus gifting you with improved immunity.

Bacon  ~ well everything tastes better with bacon but it is actually GOOD for your health too!

So put them together with a couple clean eating staples like an egg, almond flour and coconut oil and what can you make?  



Savory Paleo Butternut Squash Latkes
Makes approximately 6 Latkes how many that serves depends on your appetite!

What You Need
  • 2 cups of cooked butternut squash ~ scooped out of the skin.
  • 1 egg
  • 1/2 cup of almond flour
  • 2 slices of cooked bacon very finely diced to help with digestion
  • 1/2 an onion finely diced to help with digestion
  • 1 Garlic glove minced for its antibacterial punch
  • 1 pinch of ginger for its soothing tummy affects
  • Few sprigs of fresh parsley 
  • 1 tablespoon of coconut oil
What You Do
  • In a bowl beat the egg well and add the remain ingredients to mix.
  • Melt coconut oil over medium heat and drop a 'patty full' scoop onto the frying pan and flatten even with flipper. 
  • Brown on each side for about 4 minutes until heated through.
  • Serve as a meal on their own or as a side with some meat and veggies!
Nutritional Breakdown  

Based on the recipe making 'six' latkes ... the coconut oil and bacon gives it a bad 'saturated fat' rating but you need to decide for yourself if you feel this is a 'healthy fat' option or a 'bad fat' option cause IMO their analysis does not discriminate between fats when I put nuts in there they say they are bad too and nuts are full of healthy fats!

Impossible Lemon Coconut Pie

Nothing is more fun for me on a rainy day than baking with the kiddies to help pass the time and add some fun learning to our day! Baking is a great way to incorporate math and science lessons as well as working on those occasionally elusive toddler social skills naturally into your day! 

I love the impossible pies because they are typically nice and easy all t he stuff goes into one bowl and just mix and pour recipe plus this one is one that left the house smelling divine for a Friday .... lemony deliciousness!



Impossible Lemon Coconut Pie
Serves 8

What You Need
  • 2 cups of milk ~ we choose Almond Milk
  • 1 cup of unsweetened flaked coconut
  • 4 eggs
  • 1 tsp vanilla
  • 1/2 cup of coconut flour
  • 8 tablespoons unsalted butter, melted or a non-dairy alternative like Earth Balance
  • 1 cup of sugar or 1/2 cup of Truvia or other sweetener to taste
  • Juice and zest of 1/2 lemon
What You Do
  • Mix all ingredients in a bowl using a spoon.
  • Pour into a large 10"-12" greased pie plate or we prefer to do 'small shareable pies' 
  • Bake 350 F for 45 minutes ~ when cooking with children remember to SET THE TIMER cause its easy to get distracted! 
  • When done, the pie may be slightly wobbly in the center but it should firm up Remove from the oven and allow to cool, then refrigerate overnight if possible.
  • Serve on its own or with some homemade whip cream or ice-cream!

While made with healthy ingredients and a nice macro balance of carbs, fiber, protein and fats please remember that this is totally a TREAT SWAP to be enjoyed on occasion for those who are on a weight loss journey! 

Serving is based on 1/8 of the recipe and using 'Truvia' sweetener ~ the use of regular sugar or other sweeteners will increase the calories you can 'check' your calorie count using the Calorie Count app
