Diggin' the Donuts

OK sometimes no matter how 'healthy' you are trying to be you just have a craving for a DONUT especially when you live in Canada home of the amazing Tim Horton's on every corner filled with every flavor of delectable donut you can imagine to remind you of what you are missing by giving up refined sugar and so forth ... but thank goodness we live in the era of the Internet and access to Siri or Google Search engines to ask 'find me a grain free donut please' and alas an array of DIY options will pop up!

Baked Almond Donuts

What you need
  • 1 cup FINE ground almond flour
  • 3 tablespoons honey or maple syrup
  • 2 large eggs or 3 Flax Seed eggs if you have an egg allergy
  • 2 teaspoon pure vanilla extract 
  • 1/4 tsp baking soda (Gluten and cornstarch free)
  • Donut molds - I used mini sized ones but you can use any size just find that with grain free baking 'smaller is better' to get a nice texture / rise out of them.
What You Do:
  • Preheat your oven to 300F
  • In a medium mixing bowl, mix together all of your ingredients until smooth.
  • Grease your donut molds if required ~ we love the silicone ones as no need to grease
  • Fill your donut pans with your mixture, filling each donut mold 1/2 way full. Depending on your mold size recipe will make 8-10 donuts
  • Bake for 10-15 minutes do not overcook or they will dry out and be little donut pucks ~ you want a fork to come out clean
  • Allow to cool before removing from the molds.
  • Top them with whatever you desire ... we topped these ones with Cinnamon Sugar mixture while they were still warm. Also tasty with chocolate or maple glaze or a shredded coconut pecan mixture. 
Baker's Notes
We rarely have left overs of these but they will keep for a couple of days in the fridge.

Cinnamon Topping

What You Need
  • 1/4 cup organic coconut palm sugar 
  • 1 tablespoon cinnamon  - I love Epicure cause its gluten free
What You Do
  • Mix cinnamon and sugar in a bowl until well combined
  • While the donuts are warm lay into the mixture, flip &  sprinkle than place on plate to continue cooling as desired.
These are so seriously so tasty that the one literally disappeared between photo shots ~ just poof gone and with no guilt either!
