Coconut Lime Encrusted Salmon

Nom nom ... coconut lime crusted Salmon with Roasted Garlic Parmesan Cauliflower for the dinner win!
Quick and easy 'toss together' recipe! I mixed Unsweetened fine shred coconut with some Stevia powder and lime juice and scooped onto the chicken. Baked at 375F for 30 minutes!

Chopped the cauliflower into bite size pieces and add the garlic and parsley to the extra virgin olive oil and toss to coat the cauliflower and than sprinkle with Parmesan cheese. Bake at 375F for 30 minutes until the cauliflower caramelizes a wee bit!
I knew the girls would be begging when they smelled the salmon so I cooked them up a plain one for a treat! Spoiled kitties! Seriously look at those faces how can you not spoil them just a wee bit?
