Weekend Creative Challenge #13

  It’s the weekend! That means another creative challenge for those who might want to play along someday 🤣


Nurturing one’s creativity is SO key to helping to ensure a healthy mindset … human beings are all born with an instinct to express themselves through creativity but sometimes external factors impede peoples abilty to engage in creative expression and so their full healthy mindset is also impeded! We need to get back to ensuring that everyone has at least ONE creative outlet for expressing themselves. 

So here’s another instalment of the Weekend Creativite Challenge - each week I will post a photo prompt that you can use to get your creativity mojo going! 


Choose from the photos colours or imagery or just the general feeling/emotion that it brings to your heart! 

You can create with whatever medium speaks to you and inspires you! There are so many ways to nurture one’s creative soul!

Took a GelMoment today!

OK I Dove Right In and got some self care pampering time in this afternoon with new fingers and matching toes! 
I’ve given myself a Lovee Dovee accent nail - thinking I want to eventually add some nail art to it! Just need to narrow down a choice cause there are so many choices in my head! 


I could do an ombré of blue polka dots, a flowery or mandala stamping plate with Dove Right In tinted gel, the rainfall technique with blues/silver, a silver Cullinan shimmer or SSpectrum Chrome … how’s a girl to choose?

Buffalo Spaghetti Squash Casserole

 Buffalo Spaghetti Squash Casserole.


Ingredients 
* 2 cups pre-cooked chicken breast, shredded
* 1 large (or 2 small) spaghetti squash, baked in “rings”
* 2 tbsp olive oil
* 1 large egg
* 1/2 cup (or more) buffalo sauce
* Optional: add some ranch seasoning from Epicure
* Sea Salt (to taste)
* 1/2 cup celery/chopped/sliced
* Green onion (for sprinkling)

Instructions
SPAGHETTI SQUASH:
* Preheat oven to 400°F. Slice ends off the squash, then cut into rings.
* Use a spoon to scrape out the seeds.
* Place squash on lined baking sheet. Use hands to coat each ring w/ a little olive oil/salt/pepper.
* Bake for 30-40 minutes, flipping rings about half way. I love doing these in my Air Fryer helps with some caramelization of the squash - nom nom!  
* Allow to cool for about 15 minutes, then peel the skin away and separate the strands into long spaghetti noodles using a fork.

CHICKEN:
* While spaghetti squash is cooking, make shredded chicken. Pan fry on stove, cook in instant pot, or buy rotisserie chicken - once cooked shred/pull apart with forks or hand mixer.

CASSEROLE:
* In a medium bowl, mix together olive oil, egg, buffalo sauce of choice until well incorporated.
* In a large bowl, add cooked spaghetti squash, shredded chicken + buffalo sauce mixture until well combined. Stir in celery or any other add-ins.
* Pour contents in a greased 8×8 glass baking dish. Bake at 400 for ~25 minutes or until starting to lightly brown on the edges. You can broil at the end to get crispy if you want!




This is also tasty with some extra old Balderson cheese shredded on top.

Breakfast Pizza

 Happy FriYAY! 

Looking for a fun brunch item for the weekend? This breakfast/dessert pizza doesn’t disappoint! 
KETO FRUIT PIZZA 

CRUST::
•1 1/2 c Almond Flour
•2 TBS Sweetener
•1 stick Melted Butter
• Dash of Vanilla Extract

FROSTING::
•Full block of softened Cream Cheese
•2 TBS Heavy Whipping Cream
•2 TBS Almond Milk
•1/4 c Sweetener of choice
• 1 TSP Vanilla Extract
• Epicure Summer Berry seasoning (optional)

TOPPINGS: 
•Blueberries
•Strawberries (quartered)
•Raspberries 
•Blackberries
DIRECTIONS:
• Preheat Oven to 350F
• Combine all CRUST ingredients well
• Bake for 6-7 minutes
• Let cool, begin mixing all FROSTING ingredients
• Spread frosting on top of cooked crust
• Top with berries of your choice
ENJOY!!!

Apparently Multitasking is a BAD trait now?

 
Ok am I alone in thinking this is an unrealistic expectation???

Think I definitely need to find time to listen to the whole podcast being mentioned here for context but at first read of this meme and some of the comments over on IG all I got is that after spending 30 years working in an industry where you HAD to multitask or you risked children being injured or lost that I must have been able to adapt to having a big wide ass lens on my flashlight so I can see/do/manage more than one thing at a time … I am constantly used to doing 2-3 or more tasks/jobs simultaneously and having focus on ALL of them and yet still able to work quickly and yield great accuracy in my results! 
 
I will admit that when I was able to leave large centres and work in a smaller ratio of children that I was able to yield even BETTER results but I was still having to multitask constantly it was just way easier with only 5 littles vs having up to 12! 
 
Also admit on the last factor - YES it can be exhausting to work in settings where it’s required to constantly multitask … but there are SO many jobs where your are constantly expected to multi task simultaneously and where the ability TO do it is seen as valuable to employers - even when I worked in restaurants you had 20-30 orders up in the air at any given time all in various stages of completion and having to bounce between doing that and answering incoming phone orders or people coming to the cash to check out. You needed to be able to have great recall to snap back to where you were in which orders completion and so forth. Can you imagine how SLOW restaurants would be if they only worked on one order start to finish in the back kitchen. 

Or I think of people like Toad who are neurodivergent with ADHD or others on the autism spectrum who find having to focus on just one task very challenging to stick with and actually produce better results if they are, for example, playing with a toy in their hands, while focusing on being required to read and also needing some auditory stimuli like music on in background.

We definitely need more lifting of each other up, more seeing the abundance of opportunities out there verses seeing others as in competition with us, more collaboration and support for each other, more sharing of our life and business stories so others can learn from both the successes AND failures or others rather leaving others floundering to get hit by the bus of life’s tough lessons. 
 
Life can be so hard sometimes and a simple smile, a hand to reach out for or an ear to listen to can make the world of difference for someone!
