Baked Balsamic Chicken

Tik Tok for the win - adding this one to the menu this week! 

3 chicken breast - partially sliced across 

Mix together in bowl:
  • 2 tsp olive oil 
  • 1/4 cup balsamic vinegar 
  • 1 tbsp swerve brown sugar
  • 1/2 tsp oregano 
  • 1/2 tsp basil 
  • 1/2 tsp salt & pepper to taste 
  • 2 cloves garlic
Add chicken breast to marinate

Mixed following in baking dish 
  • 2 cups cherry tomatoes 
  • 1/2 Red onion sliced 
  • 1 tbsp Oil and salt 
Mix together well

Layer chicken over top and drizzle with any remaining marinade 

Bake at 430F for 25 minutes 
Remove & Cover chicken
 with 1 cup shredded mozzarella
Return to over until cheese melted and bubbly.

Serve with a side salad

Tasty Thursday Recipe Review - Baked Boursin Chicken

Nom nom - saw this recipe on a Tik Tok so had to give it a try! I wish I had jotted down the creator so I could give a shout out but it was a 2am insomnia find and in my effort to read the ingredients on my phone clearly I zoomed in and accidentally cropped off the handle when I took the screenshot! So whoever you are - thank you kindly for this one it was a huge hit!




 
 This one got 6 thumbs around the table here and at least one this is a worthy mouth orgasm  - even the still developing his clean eating palette cleaned his plate! 

We had this with a spinach salad because we try to eat grain free - however if you can have grains it would be lovely over pasta. Next time I think I will try it over some sauteed Zucchini noodles to help with the delicious sauce having something to stick to - although its all good I got it up with a spoon this time so it did not go to waste!

French Onion Meatloaf

Well my big sister shared a new recipe and so of course I had to have it too cause you know little sis needs to have everyone big sis has 🤣 
Recipe adapted from the lovely Carolyn over at All Day I Dream About Food


Ingredients

  • 2 tablespoon butter
  • 1 large sweet onion cut in half lengthwise and diced
  • 3/4 teaspoon Freshly ground pepper 
  • 2 lb ground beef
  • 1 cup ground pork rinds
  • 2 teaspoon Epicure French Onion seasoning
  • 1/4 teaspoon Ghost Pepper spice
  • 1 large egg
  • 4 ounces Gruyere cheese grated
Instructions
  • In a large skillet over low heat, melt the butter. Once melted, add the diced onions and toss to coat. Sprinkle with pepper and cook, stirring frequently, until the onions are soft and golden brown, 15 to 20 minutes. 
  • Remove from heat and set aside.
  • Preheat the oven to 350F. 
  • In a large bowl, combine the ground meat, pork rinds (the Pampered Chef Chopper is amazing to create quick pork rind crumbs, Epicure French onion seasoning, pepper. Stir in the egg and half of the caramelized onions, then use your hands to thoroughly combine. 
  • Transfer into a silicone baking or a loaf pan. Bake 40 to 50 minutes, until the internal temperature reaches 160F. 
  • Top with the shredded cheese and the remaining onions and place back in the warm oven to melt the cheese, about 5 minutes.
    The recipe turned out amazing!

Did you know making your own dressing could be SO EASY and QUICK?

Plus no need to have 12 different dressings taking up space in your fridge! Control the quality of your ingredients - a lot of store bought dressings use oils that are inflammatory to both the digestive tract as well as to your muscles/joints! 

I whipped up this dinner tonight for the family in under 30 minutes - the chicken was done in the BBQ and seasoned with Montreal Chicken spice from Epicure and served with Caesar salad!

Do you love bok choy?

 Do you šŸ’• bok choy 🄬?


If so how do you cook with it? Always looking for new ideas on ways to try it!!


Seriously I can’t believe I used to just walk by it all the time in grocery store and had no clue what I was missing until a couple of years ago my friend Lisa told me that it’s great in the Thai dishes from Epicure ... and she didn’t do me wrong! I am now a bok choy lover! 

How can you not love it - look at all the nutrition packed int it!


It is such a great texture of crunch and it adds a nice pair to the flavour our favourite Green Thai Curry ... nom nom nom! 

If your looking to add new healthy veggies to your palette this year Bok Choy is a must! It is now a staple for stir fry’s and soups for sure!

Ooey Gooey Queso cauliflower with Lime Guacamole Pork Chop!

If you’ve been following me you know I just LOVE Epicure meal solutions and seasonings! 

They make clean eating a snap! 

Plus you can think outside the box so to speak and use items anyway you want to explore! 

Tonight I used the Ooey Gooey Queso dip to make a sauce for our roasted cauliflower side! I used half the suggested amount of milk and stirred it up and poured over chopped cauliflower florets in the large steamer. Added handful of bacon bits and chives and tossed to cover the cauliflower evenly. Sprinkled 1/2 cup shredded cheese over the top and baked in oven on 400F for 45 minutes until the cauliflower was tender and the cheese browned up on the edges.
I created a marinade for our pork chops using the Guacamole seasoning, lime juice and a wee bit avocado oil. 
Popped it all in a ziplock baggie and let the pork chops sit in fridge for a couple hours before grilling them on BBQ! 

So delicious!

Faux Hamburger Helper!

I made my own healthy grain free version of  faux 'hamburger helper' tonight thanks to Epicure! Nom nom nom ... way better than anything that comes out of a box and way healthier!
 
 

From Epicure you will need the following ... Mac and Cheese seasoning. This stuff is way better than Kraft dinner crap! As well as Fajita Seasoning - again this is so much healthier with no fillers and low sodium.

 
Mac & Cheese Seasoning (Pack of 3)Fajita Seasoning

I browned a pound of ground turkey with onions, peppers and homemade salsa and fajita seasoning. I then  tossed couple cups of cauliflower florets with the dry Mac and cheese seasoning pack and 1/2 cup cream in my rectangle steamer than added the fajita meat mix and 2 cups spinach. Topped with some shredded cheese. Baked 350F for 30 minutes!

So tasty šŸ˜‹

Friday night snacking low carb style

One of the biggest challenges or hurtles to creating a 'new lifestyle' is getting over the connection we have between memories/traditions and unhealthy food choices .... normally Friday night has always had the tradition of 'winding down' after a long week of work life balance so we curl up on the couch with a drink in one had and a carbalicous snack in the other! So it is hard when those memories clues of it being Friday night and choosing our movie or in this case Netflix binge option of the series You sets off a 'craving' for popcorn on me!

But not this time cravings .... tonights Friday night movie time is about to begin and I am ready with the  “popcorn habit” replacement ... bacon chips with some of my carefully rationing Epicure cheesy jalapeƱo dip šŸ’•šŸ’•

Big Mac in a Bowl

When it’s 6:30 am and you’re scrolling on Facebook and thinking about what to have for lunch ... Big Mac in a bowl yes please  šŸ˜‹


I know it’s gross but Big Macs are one of the things I really miss about being Celiac like might consider one for my last meal things I miss 🤣 It is currently in the vault until Spring catalog but if you want some Big Burger sauce seasoning visit Lisa she can hook you up with some!

Low Carb Perfect Portions Banana Bread

Baking in the kitchen today to use up some ripe bananas - gluten free banana and dark chocolate chip perfect portion petites ... each one has 60 calories, 6 carbs, 2 fat and 7.4 protein - nice little breakfast on the go for Paul and I and snacks for the kids - ended up with 60 of them for the freezer so we should be good to go for a while 🤣 


I doubled the recipe that come on the gluten free flour bag as I had 6 over ripe bananas to use up and I used egg replacer cause I have a little one with an egg allergy and I used Stevia in lieu of sugar cause Paul needs low carb now with his diabetes. Also added 2 tsp of Epicure Apple pie seasoning cause I like a little extra flavour kick with my banana bread!

New Year - try New Veggies

Nom nom šŸ˜‹ a huge thank you to my Epicure consultant Lisa Maybery for the nudge to try a new veggie to the palette today ... I am in šŸ’•šŸ’•šŸ’• with BOK CHOY 🄬 I tried it tonight in the Epicure Thai Green Curry dish - I am so glad I stocked up on this particular package because it has gone to vault but if you love Thai they have several others that are just as tasty!

Seriously I walk by the Bok Choy all the time in grocery store and had no clue what I was missing ... such a great texture of crunch and it added a nice pair to the flavour our favourite Green Thai Curry ... nom nom nom! If your looking to add new healthy veggies to your palette this year Bok Choy is a must! I am going to be making it a staple for stir fry’s and soups for sure!

Check out the nutritional info on this baby .... all that protien makes it an amazing add on for a vegetarian or vegan dish!

I was doing great - until I wasn't!

Hello - my name is Margaret and I am a carbohydrate addict! 
 

I have the healthy eating knowledge on what to do to loose weight and eat healthy balanced meals. I have the cooking skills and kitchen tools to do what I need to do easily and in a time effective manner. I sought out accountability groups and partners and diet challenges to try to keep myself motivated and on track cause I do have a competitive streak to me. I even created this blog as an additional form of accountability to myself and reflective option for my journey and yet time after time I find myself riding the weight loss journey roller coaster!

I get going and I do really well sticking to my plan, using my tools and seeing success that I want and then inevitably I SABOTAGE my efforts and not just in little ways but in horrible ways that see myself regaining any success I have had in a VERY short time.

This is literally ME over and over again .... I will be doing great spend 4 months working it really hard with clean eating and going to the gym regularly and will loose anywhere from 30-40 pounds and than I will have a day where I succumb to social pressure and reward myself with a treat that is 'off plan and BAM the next thing I know I have not only gained back the 30-40 pounds I lost but sometimes a few of their friends they made while they were gone tag along and I weigh more than I did when I started again!

It is infuriating and very hard not to keep beating myself up at my failures. To try to be reflective and learn by rereading my food journal and now the blog option to see what went wrong and why and to dig deeper into the why I am so afraid of success that I sabotage myself by self medicating with FOOD even though it is not what I claim I want for myself! 

I know I want and need to be healthier and stronger - I am so exhausted living in chronic pain and the extra weight only makes the chronic pain WORSE having to carry around that extra weight on a body full of pain but the reality is that the high carb diet actually seems to feed my inflammation and pain so it is a double edge sword of I get an adrenaline rush that helps with pain from eating crap but it is than short lived because it quickly feeds the inflammation making my pain worse again! I know in my heart I WANT better for myself!


One of the things I am beginning to realize is that for me carbohydrates are an addiction and as a result are not one of those things I can manage with the 'everything in moderation.' mantra I normally try to live by. When it comes to my relationship with high carb foods it is really no different than my prior addiction to nicotine and drugs. I have an addiction disorder so for me it has to be an all or nothing because like other addicts my down fall is always rooted in telling myself "I can have just one treat because its a special occasion" and the next thing I know I am hiding in shame parked in my van because I do not want anyone to see because I know it is wrong but the one side of brain does not care to listen and it is woofing down a bag of Doritos and chasing it with a McDonald's Milkshake like my life depending on it while the other side of my brain is arguing why are you doing things you do not want this for yourself!
 
Than the dance of binge followed by guilt and shame begins and decline follows ... I stop recording in my food journal because I am ashamed to record that I ate a whole bag of Doritos and chased it down with a huge milkshakes while hiding in my van and I hate 'lying' not recording everything that goes in my mouth so because I know I will likely cheat again cause the one side of my brain is insistent it wakes me up in middle of night and it fights me every step at the grocery store putting crap in my cart I do not need and should not buy, I stop participating in the challenges and dodging accountability partners because I am ashamed, I stop blogging because who wants to read about my failures! Than a few weeks of decline I am so far gone in the cycle that I stop even hiding and just eat whatever whenever where ever cause I am just to tired and mad at myself to care.

So from yet another failure I definitely know I just cannot do moderation at all but the challenge remains is that unlike with my smoking and drug challenges I had in my youth I cannot just wall myself off from others who smoke or engage in doing drugs while I get clean of the substances and than just avoid situations where I am around people who smoke or do drugs so I can remain clean of that addiction behavior ... and it has been over 20 years since I have done either and I can tell you that even now when I do find myself around those temptations it is SO HARD not to cave in and you do not face the same pressure to engage in those things as you do when it comes to FOOD.  People do not tend to 'offer cigarettes or drugs to people and if they do they tend to respect the first 'no thank you' that most addicts try to have so that they are not faced with the continued pressure of saying no before falling off the wagon.

Unfortunately I cannot just stop eating or avoid food or eating situations so the challenge is learning how to navigate my addiciton while still engaging in the addictive behavior of eating  ... something one has to do several times a day and as a caregiver I am also faced with preparing food for others who are NOT food addicts and want to have access to sugar and are young and still need to have high carb grains in their life. 

How does a food addict better advocate for themselves in social settings when faced with temptations? It can be so frustrating in those settings when people say  'oh come on you are doing so well on your diet, you look great, you deserve a piece of cake.' and even when we have the will power to say "no thank you" the first time we continue to be faced with social pressure in those settings to 'come on do not be a party pooper just join us in eating the treat's like if you do not partake in the tradition of binge eating at a party you are ruining their fun of the occasion! 

As I sit here reflecting I am honestly at the point that I am tempted to start telling people who do this to me in social settings 'Actually I am not on a diet I am a food addict and if I eat that sugar laden devil treat I will find myself in the back alley of the gluten free bakery binge eating donuts like their are air while I mentally chastise myself for being so weak of willpower to just say NO in the first place. So thank you but offering me that when you know I am avoiding sugar/grains is like offering a crack addict a pipe and telling him he deserves a puff because he has worked so hard" because sadly society does not seem to respect that initial 'no thank you.' of willpower and seems to prod and push and in some experiences actually tease and make fun of you if you continue to say no to partaking in the treat foods. 

Perhaps it is going to take the courage of being 'in your face.' about our dietary needs so that people can, like other addictions, learn to accept that sometimes moderation is just not a choice for some people because their brain is not wired to have that kind of willpower to say NO the next time. For the addict that one puff of tobacco, one drag of the crack bong or one brownie bite and as soon as their brain gets a snoot it it will just keep at them day and night with the cravings and the whisper of the brain of just once more until they give in again and again and again to those cravings and that little voice until they either hit rock bottom to try get help to get clean AGAIN or they die of their addiction! So the only way to prevent that is to NEVER let their brain get access to the addictive agent again!

Honestly in my experience quitting the smoking and drugs was WAY easier than trying to maintain control of what goes into my mouth!


So they say the first step is admitting you have a problem the next step is finding the find the courage to once again start over and once again risk failure.

Day 25 Epic Life recap

Breakfast ... rationing out my coconut lime seasoning from Epicure because they retired it. Why is it that you fall in love with something and than boom its gone on you? I am hoping I have found a good replacement option with a splash of fresh lime and squirt of the Torani Sugar Free Coconut syrup



Lunch .... struggling with carb cravings a lot lately but trying very hard to stay on plan. Grilled cheese is definitely a comfort food and I love the Chia Seed Loaf by Promise Gluten Free Bread  paired with ranch dip made with greek dressing and Epicure creamy ranch.

 

Dinner was Turkey Taco Salad ... quick and easy and low sodium with the Epicure Taco seasoning.I prefer the jar so I can control how much I add but they also have the no think package option as well.

My back has been barking this week but I am still trying hard with the 30 day challenge - almost to the end!

Day 24 Epic Life recap

Breakfast Apple nachos with chocolate truffle yogurt ... this is a fan favorite snack for the children too! 

Lunch grilled cheese with cold veggies and dip ... cravings for carbs really getting the best of me the past week or so! Trying hard to maintain portion control to remain on plan.

Dinner Pesto chicken for dinner ... not shown protein bar and grapes after the gym.
Move more challenge plus 60 minutes in the pool at the gym

Day 23 Epic Life recap

Breakfast on the Go .... weathers warming up and that means spending more time outside in the forest or park with the kiddies so more picnic style breakfast options!

I love deviled eggs both traditionally spiced as well as I like to swap out the spice palette and make them unique - today I tried Mango Curry seasoning in the eggs with some Greek yogurt a wee bit of pickle relish and fresh ground pepper on top.


Lunch ... I was so sad when Epicure retired the Pho broth I stocked up with several jars to carry me over until something just as tasty is released to replace it!
Dinner .... caved to the craving for real pasta instead of using butternut or spaghetti squash but used my Epicure scoop to make sure I measured out the pasta and topped up with loads of veggies with the meatballs.

Day 22 Epic Life


Breakfast .... if you are a lover of strawberries and in the London area I highly recommend getting out to Heeman's when their strawberry season starts. I will resort to buying grocery berries when the Heeman's are not in season but once their berry's come in it is Heeman's all the way!

 
Lunch - cook once eat several times. This meal freezes well and makes a create encore of the Lazy Cabbage roll casserole! Thaw and pop into the microwave to reheat or reheat on the stove if microwave cooking is not your thing!

Dinner another cave to a craving today. Paul was having French Fries with his dinner and there was just a small bit left in the bag so I rationalized might as well cook them up! 


Move More Challenge - grateful for a rest day on 2 out of 5 of the Challenges I took on this month!
