Balanced Breakfast - Cocoa Crunch Coconut Smoothie with PB Toast and Grapes
What You Need Smoothie
- 1 cup Plain Greek Yogurt
- 2 cup spinach
- 1 tbsp Cocoa Crunch Whole Food Sprinkle
- 2 tbsp Torani Coconut Syrup
- 5 ice cubes and cold water to consistency you like
What You Do
- Blend until mix. Serve over ice if you like it really cold - I like anything coconut REALLY cold!
Perfectly balance with a slice of toast with 3tsp peanut butter and a serving of fruit - I had grapes today!
Day 3 Lunch - Healthier Taco Salad
What You Need
- 6 leaves of romaine - broken to bit size
- 1/4 cup onion diced
- 1/4 cup sweet pepper diced
- 5 cherry tomatoes sliced in half
- 3.5 oz lean ground turkey - browned with a glove garlic and black pepper to taste
- 4 tbsp of Salsa - low sodium (I make my own with Epicure)
- 1/4 cup of plain greek yogurt
- 15 ml of grated cheese
- 1 tsp poco picante
What You Do
- Layer above ingredients onto plate in order they appear and enjot
Dinner - Fundraising Light the Night Dinner out for to support our friend Erika who lost a dear loved one recently and is participating in the walk in her name. We enjoyed a dinner out at Kelsey's and I stayed on plan and enjoyed the Beet and Goat Cheese Salad with grilled chicken ... deliciousness in under 400 calories!
Made it through today without eating the evil temptation cupcake currently in my freezer so #NSV there!
Started a new move more challenge - it’s a bit ambitious combining 5 different ones focused on posture and balance with strengthening legs and core and tossed in some arms for good measure 🤣
As of tomorrow I can have a “free meal” a week so if that tempting cupcake comes out of the freezer I won’t feel too guilty 🤣
Tomorrows goals are to complete day two of the challenge, get to the gym for a DIY aquafit class and carve out some time time work on Fundraising cards of my own to help the Heavenly Hills Animal Sanctuary where our lovely girls came from!
